How was Thanksgiving? We got back last night after a great few days with family. I took an unplanned social media break. Holidays feel more like a holiday when I really step away from everything. I’ll give you a better warning next time.
Workouts this week included a little spontaneous test run at the nearby track! More on my return to running tomorrow. I also got good use out of my resistance bands… they look small, but they are mighty!
Menu planning really does feel like a challenge this week, so I pulled some ideas from the links in last week’s menu link up…
Sunday: Roast chicken, potatoes, onion and carrots in the oven
Monday: Leftover chicken + this Harvest Moon Quinoa
Tuesday: Fish tacos
Friday: Might try this skillet lasagna
Saturday: Out or leftovers
PS- The almond meal, coconut oil pie crust that I shared on Instagram turned out well! It’s simply 1 1/2 c. almond meal, 3 melted tbsp coconut oil, 1-2 tbsp water, pinch of salt and a few Tbsp sweetener of choice. I baked it at a lower setting as almond meal tends to burn much more easily and used it for a pumpkin pie. Yum!
