Menu Planning Link up #7 + PopChips giveaway

Good morning! I’m a single parent this weekend, and so far, we’re surviving.  After a few nap battles, I’m hoping for a smooth afternoon today- I’d like to nap, too!

What's for Dinner?

It’s week #7 of the menu planning challenge. Here are a few of last week’s dinners:

We really liked Katie’s Lentil Sloppy Joes last week (good over steamed spinach or on a roll), and black bean enchiladas are always a hit.  We topped our spaghetti squash with a minestrone-like soup, and made some delicious pumpkin muffins.

On this week’s menu:

Sunday: Eggs/pancakes or leftovers (just L and I)

Monday: Butternut Squash Curry over quinoa

Tuesday: Shrimp Arribbiata

Wednesday: Sweet potato chili

Thursday: Broccoli tofu stir fry

Friday: Leftovers

Saturday: Date night

  1. That Sweet Potato and Black Bean Chili recipe looks good. I just pinned it and think it’ll get made this week for myself. I feel like every week these days only has 1-2 nights that I cook and I’ve been so bad at planning. Tonight I’m making breakfast for dinner, and that’s all I’ve got. My husband’s birthday is Thursday, so there are a bunch of dinners out.

  2. Popchips are so tasty and a great healthy alternative to regular potato chips! I would enjoy trying the Sweet Potato flavor – coordinates with Thanksgiving too!

  4. I would like to try my old stand by sour cream and onion! Can never go wrong there! Laura, these look great! I have a really good sweet potato chili recipe too!

  5. Ooh, my kids LOVE Pop Chips! I have to admit, I am a fan of the sweet potato flavor, but they love all the flavors!
    Your menu sounds great–I make a sweet potato chili too, it is one of our favorite winter meals. And butternut squash curry? Yum.
