What a week! My husband was supposed to be downtown in NYC several days this week, which was cancelled due to Sandy’s fierce presence. We have a lot of family in the northeast, but everyone was fine, other than scary wind and piles of branches to clean up.
As sections of NYC and New Jersey were not so lucky, it amazes me how quickly I can move on in my life and forget what is going on there. I’m making an effort to turn my thoughts and prayers to the east coast today in the ongoing clean up and recovery.
On to menu planning…I took the opportunity to grocery shop alone this weekend, and spent over an hour in Whole Foods checking out new brands and reading labels that I never get a chance to do with L along. It was such a treat! Motherhood certainly changes our definition of fun.
Here’s the plan for this week:
SUNDAY: Breakfast for dinner (eggs or omelets, pancakes)
MONDAY: Black Bean Enchiladas
TUESDAY: Spaghetti Squash Pad Thai or Spaghetti Squash Pasta with Kale
WEDNESDAY: Lentil Sloppy Joes
THURSDAY: Grilled Chicken, Quinoa and Roast Veggies
FRIDAY: Leftovers
SATURDAY: Possible dinner with friends or out
Yes, there is chicken on the menu this week. Although I am not a big meat eater, my husband always appreciates it. As I’ve been reflecting on balance this week (in diet and in life) I agreed to incorporate a little more meat for him. L may or may not eat it- it depends on her mood.

Ah, you’re so good planning your meals out for the week. I bought another spaghetti squash, let’s see what I can whip up this week.
I consider grocery shopping by myself a treat too!
Whenever I have the crew with me, I usually run through the aisles and only get the usual stuff. No time to look at new things and read labels!

We’re in the NYC-area, but like your family, we’ve been fortunate to be relatively untouched by Sandy.
You know, if it were not for crowds and time pressure, I would definitely consider grocery shopping a treat. A leisurely trip to the store, where you get to wander and explore, is also my idea of a good time.

I want to send my love, thought, prayers & hugs to all of those who had to face Sandy. Some people have lost everything. It’s heartbreaking. So thankful for those that have made it through safely. I pray for the victims to recover & the Lord will give them double for their trouble.

I’m not personally (directly) affected by Sandy but my heart goes out to all of those that are.
I included a mention about label reading in my WFD post today too! I love to grocery shop especially when I’m by myself and not in a rush. I have a spaghetti squash pad thai recipe on my to-try list too! I wonder if it’s the same?

Laura – Your comment about child-free grocery shopping trip reminded me of my coworker. She is a working mom with 3 young children. She never ceases to amaze me how organized and well accomplished she is. She told me that before her 3rd one came, she used to think that every trip to the grocery store with 2 boys itself was an accomplishment. After she had her 3rd one and after experiencing taking 3 kids to the store, she said that, one time after dropping off one of the boys for T-ball and took the 2 kids to the store, it was the easiest trip ever! I guess it’s all a matter of perspective!

Great job woman! I’ve been sticking to making things on the weekends so we can eat healthy all week and then eat out on the weekends – it’s working wonders for busy mid-week healthy eating! Happy Sunday!

I am not a mom, but my favorite part of the week are my Saturdays spent at barre class and then grocery shopping at Trader Joe’s and Whole Foods. I read teh label, wander, take forever, and love it. If that is what I consider fun now I wonder what will happen when I am a mother;)

ohmygosh child-free grocery shopping is a luxery! I love roaming the aisle and taking my time rather than hastily throwing things in the shopping cart! And thanks for your thoughts and prayers for NYC.

Oh my – grocery shopping without the kids or husband is so peaceful! Plus I spend far less. It is a huge treat for me.
I do the same thing at Whole Foods – it’s like an hour long journey every time I go!
