What a week! My husband was supposed to be downtown in NYC several days this week, which was cancelled due to Sandy’s fierce presence. We have a lot of family in the northeast, but everyone was fine, other than scary wind and piles of branches to clean up.
As sections of NYC and New Jersey were not so lucky, it amazes me how quickly I can move on in my life and forget what is going on there. I’m making an effort to turn my thoughts and prayers to the east coast today in the ongoing clean up and recovery.
On to menu planning…I took the opportunity to grocery shop alone this weekend, and spent over an hour in Whole Foods checking out new brands and reading labels that I never get a chance to do with L along. It was such a treat! Motherhood certainly changes our definition of fun. 🙂
Here’s the plan for this week:
SUNDAY: Breakfast for dinner (eggs or omelets, pancakes)
MONDAY: Black Bean Enchiladas
WEDNESDAY: Lentil Sloppy Joes
THURSDAY: Grilled Chicken, Quinoa and Roast Veggies
SATURDAY: Possible dinner with friends or out
Yes, there is chicken on the menu this week. Although I am not a big meat eater, my husband always appreciates it. As I’ve been reflecting on balance this week (in diet and in life) I agreed to incorporate a little more meat for him. L may or may not eat it- it depends on her mood.
