Menu Planning Challenge Link Up #2

It’s time for week two of the menu planning challenge! How did your first week go?

I definitely benefited from having a written plan again.  I switched around a few of the days and subbed an easy eggs-for-dinner on one busy night, but I did make all four of the dinners I planned by the end of the week.  It was nice to simply glance at my list to see the plan for the night, and know that we already had the ingredients.

[The Quinoa Falafels, Pasta Fagioli and Blueberry Rice Pudding came from Appetite for Life.  I also made this Veggie Frittata and my favorite Quinoa Salad]

Here’s the plan for this week:

I’m using a Moosewood Cookbook recipe for the veggie chili, this Butternut Squash Stew and Mark Bittman’s Cauliflower Mac n Cheese (a little carb loading for Sunday’s 10 mile race!)

This week’s winner will get a sample pack of Mila, a special blend of chia seeds.  Mila is a whole raw food (gluten and sugar free), and is packed with omega 3’s, antioxidants, phytonutrients, protein and fiber.  I’ve been sprinkling it on my oats and yogurt, or adding it to smoothies, muffins,or pancakes.

  1. Last week went great, it was nice to have the plan written down for when I forgot. I love cauliflower mac n cheese, will have to make that again. The stew sounds great (especially since I have 4 butternut squash).

  2. I have yet to post my cauliflower mac and cheese. I have to find the pics I took of the recipe. MMM, quinoa falafel looks great, I’m going to go check that recipe out. Thanks for hosting. Love getting ideas from everyone, makes it fun!

  3. I’d love to see how you make yours! Unfortunately, I don’t have the quinoa falafel posted as it came from the kids cookbook I have… maybe you’ll be the lucky one who wins it. Then again, you’re already an excellent recipe creator… 🙂

  5. I just stumbled upon this menu planning challenge. I will have to dig a little deeper to check out some of the recipes. I know for me, planning the menu for the week and shopping to the menu really helps make dinner time less chaotic at my house. Plus, most clean recipes that I’ve been cooking for dinner make tons, so there is always enough for a leftover lunch for me at work too. I love leftovers. I like that you plan a dinner out too…after cooking all week, you’ve earned it!

    • Yes, it makes things so much less stressful. I always have general ideas for the week, but it was time for accountability with actually writing out a plan and sticking to it. We are huge fans of leftovers for lunch, too. Feel free to link up any time!

  6. That mac n cheese looks great! I love cheese! Also, it would be a good leftover as well, which is what I usually eat for lunches. I bet it would freeze well too!

  9. I don’t have a plan but I enjoy looking at all the menu plans and getting ideas of what to cook. Your salmon meal sounds yummy..I love salmon..
    Hopefully I get my act together and come up with a plan of my own to share here soon..For now I will enjoy everyone’s ideas..
