It’s good to be home! We went from family to family, had a short kid-free trip in the middle, and saw extended family on both sides as well. It was a busy, but fulfilling week away.
We made it back home last night and are slowly getting unpacked while I head out this morning for the half marathon. I’ll do my best to have the recap up tomorrow!
Some highlights from the week:
[Listening to grandpa make up stories; Time with cousins; A Lalaloopsy cupcake to celebrate her belated birthday; Date night dinner at a great Italian restaurant; Ice cream treat on our kid-free trip; Running in beautiful PA]
One of L’s favorite parts of flying is riding the bus to and from our car at the airport. We left our car at the Parking Spot, and she loved the yellow bus with black polka dots.
Our trip home went so smoothly. The pilot managed to shave an hour off our projected flight time (no headwind?) and our bus was waiting for us when we stepped outside the airport.
Complimentary water bottles were a nice surprise, too. We were so happy to get back to our car and be minutes from home!
It was a treat to skip cooking all week. Both of our families know how to feed us well! Back to menu planning this week…
Sunday: Veggie burgers and roasted sweet potatoes, spinach salad
Monday: Sun-Dried Tomato, Goat cheese and Spaghetti Squash Bake
Tuesday: Breakfast for dinner- veggie omelets
Wednesday: Slow Cooker White Chili
Thursday: Baked Salmon, quinoa and sauteed kale
Friday: Leftovers
Saturday: Out or Roasted Asparagus Pasta with Feta Cheese
Also, the March race for the 5 by the 5th series kicked off on Friday!! There are two more days to get your miles in and record your time. Fitfluential LLC compensated me for this campaign. All opinions are my own.

If my market has spaghetti squash today I making that bak this week too! Or soemthing like it. My mom used ot make spaghetti “pie” when I was a kid – it would be fun to recreate it!

It has been a little bit warmer here lately so my broccoli and kale are growing quickly, have to eat them every day to keep up.
