Hope you’re all having a great week!
We’ve been loving our time with family this week, and the weather is gorgeous. Monday I went out for an easy 6 miles and had trouble holding an easy pace… my legs wanted to go! I held back, but I hope I feel that way at the half on Sunday. It was in the 40s and sunny and just perfect.
We took a short kid-free trip for two days this week and savored our quiet dinners, walking through new towns, and even spontaneously went to the movies. Such a treat! (Thanks, grandma and grandpa!)
Finally, I promised that I would share our fish taco recipe this week. We’ve used a similar cilantro marinade for chicken fajitas- it makes anything taste good!
Cilantro Lime Fish Tacos (print)
- 2 c. fresh cilantro
- 3 Tbsp soy sauce (or Braggs Amino)
- 2 Tbsp olive oil
- juice of one lime
- 1 tbsp chili powder
- 1-2 tsp cumin
- 4 fish fillets
- corn tortillas
- toppings: sauteed onions and peppers, grated cheese, cubed avocado, diced jalepenos, etc
Process cilantro in food processor. Add soy sauce, oil, lime juice and spices and blend until well combined. Spoon over fish and bake, steam, or grill. Cut fish into bite-size pieces and serve on tortillas with toppings of choice.
* I started sauteing the onions and peppers first, then added the fish to the pan to cook.

If I still lived in CA I don’t know that I would be able to stick with a vegan diet. I love fish tacos too much! Living in OH fish tacos are impossible to find. It seems like most people I’v talked to haven’t even heard of them.

I am glad that you are having such a great time. A spontaneous date night sounds like a lot of fun. I love cilantro, but my hubby doesn’t. I think that it is an acquired taste, but I think it makes everything even more awesome.

So glad you had a great run with the cooler temps! And you enjoyed some alone time with hubby too! I’m not a big cilantro fan. i can deal with it in very small amounts. my husband, of course, loves it.

As soon as I saw the title of this post, I knew it would be something I’d love. Fish tacos are the BEST! Love the addition of fresh cilantro (although my husband only eats it in very small doses, so I’d have to be careful)!

I guess my last perfect run was Monday. I thought it was going to be painful and slow but everything lined up and it just felt good. Not the fastest but a feel good run nonetheless!
Thank you for posting the fish taco recipe. Fish tacos is one of my fave meals. I have yet to try them at home though.

I don’t eat fish, although I used to, so I don’t have a favorite way. So funny since I don’t eat seafood and I’m from Maine, and even worse my dad is a lobsterman!

Kid free trips are so rare! We’re lucky enough to get them occasionally.
My husband LOVES fish…me, not so much, but I have found that Swaii is cheaper than tilapia and has NO fishy taste whatsoever! That’s a huge bonus for me- if it tastes fishy at all, I just can’t stomach it!

I made cilantro lime fish tacos on Monday, but they were very different from these cilantro lime fish tacos. I hate the ones on Monday, so I think I’m going to try these because I still have a ton of leftover cilantro and tortillas.

I love cilantro/lime anything! I make a similar recipe with cilantro, lime, cumin, chili pepper, and spicy ms. dash and cook the fish in a fry pan (no butter/oils needed) in the juice of the limes. So good!!

That looks and sounds really good. I have a tendency to do a lemon basil marinade for fish but I think this would be even better.

I love fish tacos! Cilantro is my faovrit herb too. I like mine marinated with a little tequila too… it cooks out… I think.
Ahh, fish tacos are the BEST! I made some with swordfish a few months ago and I’m STILL thinking about them! Lol
