Beach day, workouts and meal planning

I can’t believe that summer is almost over! Kindergarten starts in just a few days.

We took one last opportunity for a family beach day yesterday and soaked up the gorgeous weather.

DSC_3035 We were also covered in sand!! But it was worth it.

Workouts from last week:

Sunday: 12 mile run (with 5 middle miles at 7:30 pace)

Monday: 20 minute strength circuit + short walk

Tuesday: 5.5 mile run (easy pace, 9:30 ish)

Wednesday: 3 mile stroller run/jog + push ups, tricep dips, squats and core

Thursday: 7 miles with 7, 9 and 11 minutes at threshold pace (6:50) and 2 minute recoveries with the track group

Friday: off

Saturday: 11 easy paced miles

 

I’m feeling good.  Some days the pace is coming easily, other days (like yesterday) I was trudging along, but I’m getting the miles in.

Meal Planning

I wrapped up September’s Fresh Fix e-cookbook this week – the next round starts a week from tomorrow! I’m now thinking of fall and am putting crock pot dishes back into rotation plus some easy throw together meals.

I’m also making an effort to add in meals both girls are loving on a more regular basis, so that includes things like sushi, baked ziti and homemade pizza.

 

Sunday: Pepper, basil and feta frittata + skillet potatoes

Monday: Homemade Sushi

Tuesday: Grill honey ginger salmon + Arugula avocado pine nut salad

Wednesday: Easy Fire Roasted Shrimp Tacos (in the crock pot)

Thursday: Baked Ziti + green salad

Friday: Friends over (maybe chicken or steak fajitias + guacamole?)

Saturday: Leftovers

  2. ahh we were going to go to the beach too, but decided to stay home and get ready for the start of school. Wish we did! Can’t believe it is starting tomorrow! I love the meals that you posted. My kids are into fish tacos, make your own pizza and avocado boats!! I’m also putting baked rigatoni on my list for this week! my LO is starting kindergarten too, ahh!!
