Are you a creature of habit with your meals?
It takes work to try new things! Most often, I rely on leftovers to mix up my lunch options. But when those are not an option, I fall back on the usual salads or wraps.
It helps to mix things up with the seasons, and summer is definitely the time for more fresh veggies, raw foods and giant salads.
Here are six of my favorite summer salads to mix things up:
Summer Veggie Quinoa Salad (makes enough for 4 lunch servings!)
Beet- Carrot Salad (add hard boiled eggs on the side for protein, serve over greens, top with nuts or seeds, etc to complete the meal)
Tuna Avocado Salad (great over greens, or as a dip for veggies)
Quinoa Power Bowl with Lemon Tahini Dressing (you can make 3-4 servings at once to have lunches ready for the week)
Blueberry Balsamic Dressing (mix up your usual salad with a new dressing)
Stick with what you like and what is easy for you to throw together. But if you are looking to add more variety, start with just one new recipe per week, which may be 1-4 lunches. Otherwise, it’s easy to become overwhelmed with your ambitious meal plan and skip it all.
