5 Weeks until Boston + Meal Planning

My husband gets back today from a week in Costa Rica “working” – woohoo! I’m so ready to have him home again- I forget how much he does until he’s gone.  No one was emptying the trash, dumping the compost, taking out the recycling, loading and unloading the dishwasher, washing the baby’s diapers… I was keenly aware that it was just me.  It was a marathon of a week! Every time I turned around someone needed me.  Every time I cleaned one room, the next was in the process of becoming a disaster.  He was missed!

And next time I’m going with him.  🙂

This morning I’m heading out for a 10 mile race.  I haven’t talked about it because I wasn’t sure if I would do it or not but I decided to go for it.  Even if my legs aren’t up for “racing” it will be a great way to get in a long run.  My parents are here helping out for the weekend so I have no excuses!

Sunday: 4 recovery miles

Monday: taught spin class + NEAT throughout the day

Tuesday: 10 run (8:18 pace)

Wednesday: 6 easy stroller miles + push ups and core

Thursday: at home strength workout + short walk

Friday: 6 easy miles (8:50 pace)

Saturday: off

If I get my 20 miler in as planned today, I’ll finally be over 45 miles for the week.  This training cycle has not been what I intended, but it’s certainly good enough.  Just 5 weeks to go!

For the meal plan:

Sunday: Salmon, steamed cabbage, corn and sourdough bread with my parents

Monday: Turkey quinoa meatball lettuce wraps

Lettuce wrapped meatballs

Tuesday: Spaghetti Squash Pizza Bake

Wednesday: Sweet potato black bean veggie burgers

Thursday: Leftovers

Friday: Crock pot Raspberry Chipotle Chicken

Saturday: Salads with leftover chicken

Have you traveled to Costa Rica or Central America?

Have you ever done a last minute race?

  1. Oh I would definitely be going with him! I’m sure you could find a way to entertain yourself while he’s busy “working.” Good luck today! I’m heading out for a 20 miler in just a bit. It’s supposed to start snowing at some point – I guess winter isn’t over just yet!

  2. Costa would be pretty amazing! I’ve never been but I have been south of the Bahamas to Antigua which was beyond paradise!! Your training still looks solid. Can’t believe it’s only 5 weeks away! My marathon is 6 weeks and it’s just flying by like crazy!! And yes, I ran last minute 10 miler actually and it turned out to be one of my better races! Best wishes today!!

  4. Ahh Costa Rica looks beautiful! I have never been. You’re right about going next time! I am just getting really comfortable leaving the kids and going away (by myself or with husband). And it’s a good thing!

  5. I’ve never been to Central America, but I spent a few weeks running through South America.

My husband doesn’t know it yet, but I’m planning for the whole family to go back fot my 40th birthday. He’ll love it and the girls travel well.

  6. That view…I went to Costa Rica a few years ago for a wedding and it was AMAZING…Next time you need to go. I did one last minute race and it was actually the Rodeo Run 10K and it was my fastest run ever…Not sure how that happened, but it was a blast!

  7. Ooh, I really want to go to Costa Rica. I remember when my husband used to take business trips leaving me home with small children– not fun! Made me grateful, though, that I was not a single parent, IDK how folks do it!
