If you follow me on Instagram, you know that the baking bug has hit me lately. I promised I’d share these Coconut Butter Chocolate Chip Cookies… they’re a treat, not exactly a health food. Although I did throw in nut butter, coconut butter and flax and used rolled oats to make myself feel like there was a bit of nutrition along for the ride!
Coconut Butter Chocolate Chip Cookies
- 1/4 c. coconut butter
- 1/4 c. unsalted organic butter
- 3 Tbsp nut butter (I used creamy pb)
- 1/3 – 1/2 c. sugar (I used half sugar, half Tagatose- made from stevia)
- 1 chia egg (1 Tbsp chia in 3 Tbsp water for 5 minutes)
- 1/2 tsp vanilla
- 1 c. rolled oats
- 1/3 c. ground flaxseed
- 1/2 c. dark chocolate chips
- optional 1/4 c. sunflower seeds
Blend the butters and sugar with a mixer until fluffy. Add chia and vanilla and blend. Then blend in oats and flaxseed. Stir in chocolate chips and sunflower seeds. Drop by teaspoons onto a greased baking pan, and bake at 350 for 8-12 minutes.
I love that my friend Carla started to use the term “foods with benefits” rather than “healthy” when helping her daughter navigate food choices. Maybe I can call these cookies with benefits?
