If you follow me on Instagram, you know that the baking bug has hit me lately.ย  I promised I’d share these Coconut Butter Chocolate Chip Cookies… they’re a treat, not exactly a health food.ย  ๐Ÿ™‚ย  Although I did throw in nut butter, coconut butter and flax and used rolled oats to make myself feel like there was a bit of nutrition along for the ride!

Coconut Butter Chocolate Chip Cookies

  • 1/4 c. coconut butter
  • 1/4 c. unsalted organic butter
  • 3 Tbsp nut butter (I used creamy pb)
  • 1/3 – 1/2 c. sugar (I used half sugar, half Tagatose- made from stevia)
  • 1 chia egg (1 Tbsp chia in 3 Tbsp water for 5 minutes)
  • 1/2 tsp vanilla
  • 1 c. rolled oats
  • 1/3 c. ground flaxseed
  • 1/2 c. dark chocolate chips
  • optional 1/4 c. sunflower seeds

Blend the butters and sugar with a mixer until fluffy.ย  Add chia and vanilla and blend.ย  Then blend in oats and flaxseed.ย  Stir in chocolate chips and sunflower seeds.ย  Drop by teaspoons onto a greased baking pan, and bake at 350 for 8-12 minutes.

I love that my friend Carla started to use the term “foods with benefits” rather than “healthy” when helping her daughter navigate food choices.ย  Maybe I can call these cookies with benefits?

  1. Congrats to the winners!! Laura, thanks for the recipeโ€ฆ..I’m whipping these up this week! I have my first race of the season, a 10 miler on Sunday. The husband is joining me on this one ๐Ÿ™‚ Not sure what to expect for time as I have never run a 10 miler, I’m just hoping to run good and feel good the whole race!

  3. These look delicious!! I’m obsessed with anything and everything coconut lately. I’ve been craving cookies lately (maybe it was our trip to the biscotti place?) but I haven’t made any because I’m scared I’m going to eat them all at once! ha!
