38 weeks workouts + meal planning link up

How’s your weekend going?

We’ve been busy with house projects… more baby organizing (thought I was done but there is always more!), some yard work (not me), sourdough bread making, playground and pool time.ย  It’s really nice to have nothing on the calendar these days! Although I’m trying not to let my mind wonder to when this baby will make an appearance.

I did get in two more short runs in the early part of this week, but then my Achilles was talking back to me and I decided resting from running until the end is the smartest idea.ย  So I’m walking, spinning and taking extra naps and it’s been perfect!

The recap:

Sunday: 4 mile run- felt good, just very slow

Monday: 20 minute weights + 30 minute walk

Tuesday: 4.25 run – felt achy afterward and decided this should probably be the last run

Wednesday: 1 hour walk

Thursday: 45 minute spin

Friday: am 3 mile walk + pm 3 mile hike on our date night

Saturday:ย  Off

We got in one more date night on Friday and decide to pick up picnic foods at Whole Foods and then go on a hike.ย  There are so many trails around that we haven’t explored yet- it was fun to check some of them out.ย  And it was a beautiful, cool evening.

As for the meal plan, my goal is to have Jared cook this week.ย  ๐Ÿ™‚ย  But here are a few ideas:

 

Sunday: Quinoa pasta with ground turkey and sauce + sauteed kale

Monday: Layered Fiesta Bowls (inspired by Brittany!)


Tuesday: Grilled chicken and veggies + corn on the cob

Wednesday: Neighbors over for dinner… need to decide!

Thursday: Fish with peach-mango salsa

Friday: Leftovers

Saturday: Egg sandwiches or picnic dinner at the pool

Any suggestions for an easy, yummy dinner to make for our neighbors? They are expecting a baby in November so we’re looking forward to getting to know them better.

  2. Simple summer meal idea…

    Chicken breasts, garlic cloves chopped, olive oil, balsamic vinegar, cherry tomatoes, salt, and pepper. Top with a bit of fresh basil.

    We used leftover roasted chicken and made it in the crock pot a few days ago. Absolutely delicious according to my meat eaters.

  3. Oh – I thought Tina’s fish and salsa looked so good when I saw it yesterday – I think we will have it soon, too!!
    Maybe a salad bar for the night your neighbors come over? In the summer I’m all about lighter meals!!
    Enjoy your last couple of weeks with only one child!
