35 weeks- Workout recap and meal plan

Hi friends,

It’s another perfect summer weekend so I’ll keep this brief.Β  Hope you’re enjoying lots of time outdoors!

I hit 35 weeks on Friday, and am still feeling good. Here’s the workout recap:

Tuesday: 20 minute strength circuit + 3 miles walking NYC

Wednesday: 5- 6 miles walking around NYC

Friday: Off

Saturday:Β  Taught spin class + 10 minute resistance band upper body

5 miles at 34 weeks pregnant

Back to meal planning this week!

Sunday: Grilling burgers and eggplant, corn, salads and watermelon

Monday: Tofu Peanut Noodles with cucumbers and broccoli

Tuesday: Leftovers

Wednesday: Bean enchiladas (x2 – working on filling our freezer for post baby!)

Thursday: Spinach Lasagna (x2 again!)

Friday: Leftovers

Saturday: Neighbors over for brunch: Veggie Frittata, German Apple Pancake, fruit salad

Participant highlight: Angela from Happy Fit Mama has been part of the link up since day one! Her blog is a fun mix of running and training, recipes, stories of life as a twin mama, and more. We have so much in common- we’ve been planning our meet up for over a year now, and need to make it happen.Β  πŸ™‚

I haven’t decided on the recipes for spinach lasagna or the bean enchiladas for the freezer yet… if you have a favorite, let me know!

I’m taking suggestions- what meals would you freeze in preparation for a newborn?

Do you enjoy exploring a city on foot like we did?

    • Yes- we were covered with meals for quite awhile last time, too. It’s so nice! I’m focusing mostly on the muffins/pancakes/protein bar type foods that I won’t feel like baking later but thought I’d throw some dinner options in there, too. We just plugged in our deep freezer and now I want to fill it up! As for the meet up- we need to make that happen!!

  1. Given that Susanna was due at the end of November, and this baby is due one day before her, I froze (and will freeze) a ton of soups. Split pea, black bean, great northern bean, etc. These are mainly for my hub (and Sanna this time). I’ll also do a few pasta dishes and make sure there is plenty of meat on hand.

For me, it’s granola, anything oat based, the filling for veggie stuffed peppers, gluten free muffins, and I’d like to try date-based truffles for those need-a-bit-of-sugar moments.

  2. Looking beautiful! We’re doing burgers and lasagna this week too, but that’s as far as I’ve made it on my meal plan lol. I am super lucky that my husband loves to cook, so he just totally took over the kitchen after the kids were born.

  3. I’m so impressed with your workouts this far into your pregnancy! I had intentions of making freezer meals before we got the boys, but never got around to it…partially because one of them came early πŸ˜€

  4. WELL, I have always HEARD of freezing meals, but I have yet to try it myself, aside from me making and freezing meatballs and burgers, I’ve never done a meal! Interesting, I’ve seen pins for it, but never heard anyone do it! AND, you are in such great shape! Running so much while pregnant? You go girl! Congrats on the babe on the way <3

  5. How much longer are you going to teach? Right up until delivery? I’m making my Chicken Artichoke Pasta Salad w/ Greek Feta dressing for our 4th of July party this week. It’s a big hit and easy enough. πŸ™‚ Way to keep up the running with baby and in this heat. πŸ™‚ xo, Jess
