24 weeks workouts + meal plan link up

Hello from PA, again! We got here Thursday night and have been making the most of the beautiful days in the country.  L has been put to work, helping in the garden.  🙂 They planted onions this week so we’ll get to check on them when we’re back in a month or two. (Honestly, she only planted two and then ran off to the sandbox).

Planting onions

Speaking of gardens, yesterday was the Garden Spot Half marathon! Details on that tomorrow.  Here’s the recap from the week:

Sunday: 40 minute bike + 15 minute weights upper body

Monday: 4.25 slow run

Tuesday: This strength workout + a 30 minute walk in the afternoon

Wednesday: 1 hour spin + 2 elliptical miles

Thursday: Easy 3.5 run

Friday: Off

Saturday: 13.1 Half Marathon!

Now that the half is behind me, I’ll be happy to stick to shorter distances and more cross training.  But it was a blast to be part of a race again! And I felt great- my hips, knees, and whatever else I was expecting to talk back to me by this stage or pregnancy are feeling fine.  It just takes too long to run double digits these days.

For the meal plan this week:

Sunday: Dinner with my parents before we head home

Monday: Mango and Sweet Potato Tacos

Tuesday: Brinner – Eggs, turkey bacon, and Spinach-avocado-orange salad

Wednesday:  Chicken Enchiladas (in sprouted grain wraps and cutting back on the chilis)

Thursday:  Cauliflower Mac and cheese  + Sauteed Swiss Chard with oil and vinegar

Friday: Leftovers or out

Saturday: Possibly meeting friends or homemade pizza

Can you tell I’m wanting more comfort food lately? Pasta, pizza and enchiladas sound amazing right now, so that’s the plan. Lots of veggies in there too- thankfully I’m still craving and enjoying those as well.  I’ve been eating almost an avocado a day, too! And oranges… mmm.

Do you garden or have intentions to (like me)? 🙂

What has been sounding good to you lately?

  1. Hi Laura! I loooove to garden…unfortunately it doesn’t love me. I single handedly destroyed all our herbs last spring/summer…but I’m giving it another shot this year 🙂
Nothing had been sounding good until I saw the Cauliflower mac & cheese…how early is too early in the morning eat this?!?! 🙂

  2. Those tacos sound delicious! I’ve got to get started on my garden, but the weather just hasn’t been cooperating. Hopefully the week after the marathon, when the kids are out of school, and they can ‘help.’ : )

  4. Your menu looks super yummy for the week, and WTG on the half! That’s super impressive!

Seamus and I had every intention of starting a raised garden this summer, but with the crap going on with our apartment, I’m not sure whether it will happen or not. We probably should still do it, because the thought of fresh sun-warmed tomatoes, makes my mouth water. 🙂
