2 Weeks until Boston + Meal Planning

Hi friends!

I’m just popping in this morning to share my week of training and a few meal ideas.  We got back late last night from a day of playing with cousins.  We’re making it a tradition to get all the cousins together the day before Easter for egg hunts, craft projects and good food!

Boston is two weeks from tomorrow.  It’s getting very real! And thankfully, I felt like my normal self this week.  I had energy for my runs and had many moments of remembering “THIS is why I love running” – new scenery, the sunshine, the adrenaline boost for the day… it was a good week.

Country running

Sunday: 7.5 run (3.5 of those with the stroller)

Monday: 45 minute spin + upper body strength

Tuesday: 5.5 run (8:20 ave) + 30 bike

Wednesday: 20 minute weights + 30 minute walk

Thursday: 6 mile run (7:30 ave)

Friday: off

Saturday: 15 long run (last 3 miles sub-8 pace)

 

For the meal plan:

Sunday: Easter Dinner (Ham, potatoes, corn, red beet eggs)

Monday: Zoodles with Grilled chicken and Pesto

Tuesday: Greek omelets

Wednesday: Spring rolls + carrot beet salad

Thursday: Quinoa Power Bowl with Lemon Tahini Dressing

Friday: Soba noodles with Roasted Pepper Sauce

Saturday: Leftovers

  1. Glad you were able to reconnect with running! I’ve felt the same way the last few weeks since I stepped out of my comfort zone and decided to check out some new areas of my neighbourhood. Got in a good 4.5 miles today and actually enjoyed every minute…so refreshing! My daughter comes home from her Cheer Camp today so we will be dying some eggs and just relaxing, tomorrow when it is supposed to be really busy in town we are going to go eat, people watch, and check out some tulips at a few of the museums and courtyards to celebrate. Happy Easter!

  2. Happy Easter!!!!! Getting the kids together is such a great idea…they will look back on it as great times!!!!
    Boston is getting SO close!!!!!!
    That scenery is VERY beautiful!!!!
    Since we moved and are not really near family we played it low key this Easter…which was actually really nice and relaxing 🙂
