I mentioned on Sunday that I neglected to menu plan this week. It has worked out well so far, as my husband had a short trip away and L and I are happy to eat eggs, oatmeal, yogurt, smoothies and soups for meals.
We are back to normal tonight, and it’s always nice to have a big pot of something to ensure leftovers for lunches the next few days. I made a crock pot of black beans and decided to round up some other crock pot recipes for easy referencing.
Nutrition tip: One of the benefits of soups is that all of the nutrients leached from the food during the cooking process are contained in the broth, unlike boiling or simmering vegetables where the cooking water is drained off.
Here are a few of my favorites, as well as several I’d like to try:

The crockpot is a staple year round in our house. Bean chilies with sweet potatoes is my favorite. Pinning this for future reference!

Thanks for sharing. I got a new crockpot a couple of years ago and haven’t used it much. I haven’t figured out the cooking times so everything was either mushy or not done.

I love crockpot soups in the winter by get are usually the healthiest, easiest way to warm your belly and they almost always make me feel like everything is right with the world (I think this may have something to do with my mother making soup any time there was a bump in the road or an illness, so it always makes me feel better).
I just pinned this so I could enjoy some of these soups soon!

These all look good, and we are trying to eat more and more Vegan meals.. this gives me some good ideas. I love doing a corn chowder but I need to experiment to try to make my version vegan and healthier, right now it has cream and bacon in it, GAH!

Yum! All of those look great! My favorite crock pot recipe as of late is just to stick some chicken, home made taco seasoning and a whole jar of salsa in the crockpot and cook it 8 hours on low – then you shred the chicken when it’s done cooking for burritos and it tastes like you ordered in from a Mexican restaurant!

Love, love, love my crockpot. I’ll have to try some of those recipes. I have a wonderful Moroccan Chicken recipe that I use over and over. I used to think the Crockpot was the lazy man’s cooking device but I’ve come to embrace it (and the fact that I really don’t like to cook, I just like to eat).

I love cooking with the crock pot!! Especially chili… and chicken tortilla soup! I actually found a really easy applesauce recipe that is basically apples, cinnamon and water! All-natural and super tasty.
